Namaste Foods uses xanthan gum that is NOT derived from corn or corn
sources. It is certified by the manufacturer to be free of all
carbohydrates including corn, wheat and soy.
Evaporated cane juice is a healthy alternative to refined sugar. While both sweeteners are made from sugar cane, evaporated cane juice does not undergo the same degree of processing that refined sugar does. Therefore, unlike refined sugar, it retains more of the nutrients found in sugar cane.
Namaste Foods products are formulated to be used with eggs. However, we have many customers who use a powdered egg substitute with success though some amount of experimenting may be necessary.
Our customers have found that, in general, adding the dry egg replacer directly to the dry mix without reconstituting, then following the package instructions works best. Some have also reported good results when increasing the amount of powdered egg replacer called for on package directions.
1 TBLS flax seeds plus 3 TBLS water replaces one egg. Finely grind 1 TBLS whole flaxseeds in a blender or coffee grinder, or use 2 1/2 TBLS pre-ground flaxseeds. Transfer to a bowl and beat in 3 TBLS water using a whisk or fork. It will become very gooey and gelatinous, much like an egg white.
Egg Substitute using Small Planet Organic Tofu
Attention: Tofu contains soy!!
Replace each egg with 1/4 Lb of Small Planet Organic Fresh Original Firm Tofu. Combine tofu, crumbled into a food processor, with the oil and water called for in the recipe, and puree in food processor until smooth, then add to mix.

Other suggestions from a customer:
For each egg, substitute one of the following in your recipe.
1 tsp baking powder + 1 TB water + 1 TB vinegar
1 tsp yeast dissolved in 1/4 cup warm water
1 TBLS apricot, prune or apple puree
1 1/2 TBLS water + 1 1/2 TBLE oil + 1 tsp baking powder
1 packet gelatin + 2 TBLS warm water (don't mix until ready to use)
It is a surprise to most people but we use real vanilla! What you see in your Waffle/Pancake Mix is bits of ground vanilla bean. You can also expect to see these in our Vanilla Cake Mix, Muffins, Cookies and Blondies.
Our Pizza Crust seasoning contains both granulated garlic and onion, parsley,
rosemary, sage, thyme, basil, oregano and marjoram.
Original Namaste Foods Baking Directions for
One 14" Pizza Crust or 4 Mini Crusts:
What You Need:
Combine 1 cup warm water and 1 1/2 teaspoons olive or other
oil to 2 3/4 cups of dry mix. Beat with an electric mixer for 3
minutes on high speed. Form dough into a ball then put on your
stone or pan. Roll out to about 1/4" thick.
Bake for approximately 10 minutes on lowest oven rack. (You
can freeze for later use at this point.)
Add sauce and whatever toppings you like. Brush edge of crust with
olive oil. If the bottom of the crust looks brown, move pizza to
the middle rack and bake another 8-12 minutes. Otherwise,
leave it on the bottom rack and bake. Enjoy!
Natural Cheese Flavors: They are a prepared blend of natural organic acids,
fatty acids, aldehydes and ketones, that are used to produce a particular
characteristic taste under food grade processed conditions: they are free
of dairy allergens/protein components and deemed Kosher Pareve.
Baking is tricky at higher altitudes and gluten-free baking can be even more of a challenge. Just reducing the liquid doesn't do enough, the cell walls also need strengthening. The following suggestions are from folks who live at high altitudes. Try adding 1 tsp of xanthan gum and 4 TBLS of rice flour to the flour mixture. Reduce the water by 25 percent and reduce the oil by 1/3 to 1/2. Optionally you can try adding one more egg to the mix. Increasing the oven temperature by 20 degrees may be helpful as well.
Also customers have reported that adding 1 tsp of baking powder to the flour mixture and using only 1/2 the water called for gets good results.
You don’t need to add anything to the mix. Increase your temperature by 20 degrees and cook for the full 70 minutes. The change occurs with the eggs. Before you add the 3 egg whites, beat them to stiff peaks. Mix all your other liquid ingredients together after your yeast is dissolved including the whole egg and start mixing them into the dry mix. Then fold in the beaten egg whites and continue to mix the batter until there is no dry mix left. The rest of the instructions remain the same. I thought the results were impressive. Now my husband has a decent sized sandwich instead of one that is only 3 inches tall. Just a reminder that these experiments were conducted in Montana at an altitude of 5199 feet above sea level with a relatively dry humidity. The results may vary with more humidity and/or at higher or lower altitudes.
Namaste Brownie mix
3 Tbsp Namaste Perfect Flour Blend or other gluten free flour
1/4 cup water
1/2 cup canola oil
4 eggs
Bake in a 9x13 pan at 350 for 35 minutes or until toothpick inserted in center comes out clean.
Use the 1-1 1/2 lb loaf setting with a medium color crust. Or if there is a gluten-free setting you can use that as well.
